DAS HELWIG HAUS B&B
It was in November of 1992 that we purchased these 32 acres at 113 Mt. Stirling Road, Glen Aplin on the Granite Belt - the cool mountain district of southern Queensland. Our aim was to establish a Bed and Breakfast business to provide us with a ‘way of life’ during our older years. Happily, we were successful. On the 3rd July this week my husband, Eberhard, reached 83 years of age. I am now in my 70th year. We have reached the reluctant decision that it is time to sell our business and retire. It is unlikely that I will ever truly retire, as once I no longer have the physical work associated with this business, I’ll be able to give more time to writing and sharing with my readers the knowledge I have gained. Nonetheless as Eberhard is 14 years older than me I am expecting that he will need more full time care in the years ahead.

The photo above of Eberhard was taken last December when his heart failed. He was airlifted to a Brisbane hospital by helicopter where a cardiologist inserted a pacemaker to keep his heart beating. He made an excellent recovery. Read the rest of this entry »

CHRISTMAS AT DAS HELWIG HAUS B&B
I have been blessed by the arrival of a useful young Korean man called Jerry, who majored at a Korean University in tourism. When he returns to Korea he plans to work for an Uncle who has a resort on the hills overlooking the eastern sea towards Japan. Jerry told me that I was the ‘busiest’ grandmother he had ever seen. I think he was referring to the amount of work I do. I have found him helpful at cleaning bathrooms, hanging out washing and pressing sheets. He is excellent with meal service too, cleaning up the kitchen and packing the dishwasher after meals. He is a Wwoofer - a Willing Worker on Organic Farms and came to me expecting to undertake garden work. www.wwoof.com.au There will be plenty of that! Now he says he is delighted to be here as he has found himself gaining experience in a tourism business. The photo below shows Jerry emptying compost onto a garden patch where I’ll plant potatoes and sweet-corn next spring.

I’ve had an exhausting time since my brief days of rest and recreation in Hong Kong as I’ve been preparing for our winter season when every Saturday night I serve a German style, roast goose Christmas dinner to our in-house guests. This is our 17th year of providing Bed and Breakfast, plus a Saturday night dinner for our guests at Das Helwig Haus B&B who come to visit the sixty wineries of the Granite Belt. AN ABUNDANCE OF FIGS
Two years ago when Barbara Buchannan offered to become my companion for five months and assist me like a member of the WWOOF organization, it was her tales of sun-ripened figs that made her European friends envious. She told them of her pleasure in standing under the tree shown below, choosing sun warmed fruit that almost melted in her mouth.

When I established our garden at Das Helwig Haus B&B I planted four fig trees of different varieties. Ian Robertson, CEO of the Australian Open Garden Scheme, congratulated me in 1997 for choosing to use a fig tree as a specimen tree to add texture and color within our floral garden. During our cold winter months on the Granite Belt the bare branches give a surrealistic view on a foggy morning and emphasis the Japanese influence in the design of this portion of my garden.

Every year this particular tree yields buckets of small, dark skinned, red fleshed, sweet figs. Every year we eat fresh figs, I make fig jam, I dry figs and I preserve figs in syrup as a dessert. This small fig variety is not readily available from plant nurseries. I was given a sucker to grow by one of the Italian born farmers on the Granite Belt. MY BOOK IS PUBLISHED
On the 26th February, 2009 I became a published author. My book Wildflowers, wilderness and wine was released on this site http://stores.lulu.com/strictlyliterary
My literary agent had presented my manuscript to a number of big name publishers in Australia only to be told they regretted that they were not publishing any books of this genre. Amazingly, it proved relatively easy to have the book published in the USA. We are now in a global society and people are increasingly using the internet, so rather than have many books printed and on display in stores, we have taken the option of having my book printed on demand.

This photo was taken by freelance photographer David Martinelli when he was preparing a feature of the Sunday-Mail newspaper about our Remembrance Field and 11th November observance of the signing of the Armistice Treaty at Versailles in France at the end of World War One.

AN ABUNDANCE OF TOMATOES
Although I grow organic tomatoes in my garden they are mostly for salad use. I find that the cherry tomatoes have less insect problems than the commercial varieties. My garden at Das Helwig Haus B&B on the Granite Belt of southern Queensland is surrounded by commercial fruit orchards and vegetable farms. The down side of this is that all the insect pests manage to find breeding spots every year, hence the need for farmers to use insecticides and those pests are happy to move on to my unprotected crops. The plus side is that the farmers will kindly give me their excess produce.

Last year I was allowed to pick tomatoes from fields that had been abandoned. It is commercial practice to only pick tomatoes while they are green. When the price drops, or the farmer thinks the plants are past their prime, the crop will be abandoned as uneconomical. When time permits the farmer will clear his land for a different crop in his rotation plan. Thus, each year I witness the waste of many vegetables as they rot in the field.

The good thing is that as the crop was still green when the farmer abandoned it, these tomatoes had several weeks to ripen naturally in the sun, free of insecticides. . Read the rest of this entry »

FOR CARMEN
Carmen was one of three Italian girls who came to WWOOF for me in August. Recently she wrote to ask:
Hi Fay,
I am writing a text about my experience by you. I remember a strange story about the name of a bird, which you tell us but I don’t remember the whole story. could you help me, please? could you also tell me something about the methods you use to improve your garden. I wrote something about the use of jelly, molasses, compost, fence against birds, and the practice of burning grass. Could you explain me something more about it?

I wondered, had I told them about the Kookaburra, the laughing Jackass? The Kookaburra belongs to the Kingfisher family and as such are carnivores. They sit on a branch looking for any movement in the grass below. They will snap up a snake and beat it against a branch of a tree, or drop it from a height to stun it. Two kookaburras may even join forces, one on each end of the snake to pull it apart. They will eat the snake. In the winter time when snakes are hibernating and other prey may be scarce they will perch along my garden fence, looking for little frogs or lizards. They often frequent picnic grounds for a free handout. They will come regularly for feeding if people begin throwing them meat scraps.

We have several family groups of Kookaburras on our farm. They cluster together every evening on a tree branch and laugh. Our overseas Wwoofers often think this noisy “Hoo-hoo, ha-ha, hoo-ha” type call is the chattering of monkeys in the trees, but Australia has no monkeys. Due to this chorus of laughter these birds are sometimes called the Laughing Jackass.
The Kookaburras cluster and laugh shortly after dusk and again laugh in the morning at first light before dispersing for the day.
In the spring season there is much laughing throughout the day as the male Kookaburras compete to claim territory.

AN ABUNDANCE OF POTATOES.
With a bit of luck I can manage to grow several crops of potatoes each year, planting the first seed potatoes in October with a further planting after Christmas. Potatoes will handle quite rough soil so are a good crop to put into new ground. They are not a deep rooted plant like carrots, which will push down into the soil. Instead, the tubers grow out from the original seed potato. It is necessary to hill them as the plants grow to cover the young tubers. If you keep building up the soil around the stem of the plant they will continue to make fresh tubers in ever increasing layers. This may also be done by creating a support for the soil with rubber tires mounted on rubber tires. This is a great way of cropping for people with limited gardening space. Using this method it is also possible to grow potatoes in the milder winter climates, providing the tops are covered each night against frost.
Potatoes are well suited to growing in furrows which can be flooded with a garden hose and is the way I prefer to grow mine. To get an early start this year I planted two rows of seed potatoes in October amongst the red Flanders poppies in my Remembrance Field at Das Helwig Haus B&B at Glen Aplin on the Granite Belt of southern Queensland.

SUCCESS BREEDS SUCCESS
It can be said that nothing succeeds like success. Once a successful outcome has been achieved more successes will automatically follow. Das Helwig Haus B&B on the Granite Belt near Stanthorpe in southern Queensland was named by the journalists of The Courier-Mail newspaper in 1998 as the Best B&B in the Sunshine State. As our fame spread every journalist who visited the Granite Belt chose to write about our Bed and Breakfast home or my garden.
Back in the 1980s when I had lived at Dalby, I had begun a course called Writing for the Media from the TAFE College in Adelaide. The knowledge I gained was to assist me enormously. I could write advertisements and by 1998 had I designed our website layout for http://www.webstation.com.au/accom/helwig
When contacted by SBS TV The Food Lovers Guide to Australia asking for details of our German style Christmas in July dinners I wrote a TV script of how we spent our days. The presenter arrived carrying my script in her hand and proceeded to follow it during their two day stay.

AN ABUNDANCE OF CHERRIES
For me, cherries have always been associated with Christmas mornings. As a child I left a pillowslip at the end of my bed on Christmas Eve as I recited, “Now I lay me down to sleep, I pray the Lord my soul to keep. If I should die before I wake, I pray the Lord my soul to take.” Waking in excitement at the first light of dawn I would peer into the depths of the pillowslip to find the small brown paper packet containing apricots, plums and cherries. Stone fruit were scarce and expensive, but always a Christmas treat.
I knew nothing of Morello cherries, the sour kirsche of Europe, until I married Eberhard. Almost thirty years ago he established one of the first coffee shop restaurants in Toowoomba, which became rightly famous due to his skill as a baker of Continental cakes. In those days it was nothing for him to bake and assemble two large Black Forest Torte every day. In those days he was able to buy 5kg tins of sour kirsche imported from Yugoslavia.
When we moved to the cool mountain climate of the Granite Belt in 1992 and established Das Helwig Haus B&B, one of the first trees I planted was a Morello Cherry tree to enable us to harvest and preserve our own cherries. Like many other Australian fruit eating birds, the Eastern Rosella parrots have flourished since fruit orchards were established on the Granite Belt and now every year farmers set up scare guns to startle the parrots away from their orchards and vineyards, or they shoot hundreds. These birds are not an endangered species and the alternative is costly – to net the crops.

PAULA – MY CHEF FOR THREE WEEKS.
It was Eberhard who met the bus from Sydney at Glen Aplin and brought Paula Snow to our home. Paula had contacted me from Boston in the USA and asked if she could come to me as a wwoofer. She had joined the WWOOF organization and discovered that Das Helwig Haus B&B was a host farm prepared to teach organic gardening and cookery skills to young international travelers who were Willing Workers on Organic Farms.
Over coffee, i discovered that she had studied cooking for three years at a culinary school, then worked under a senior chef at an Italian restaurant for two years and then under another senior chef in a seafood restaurant for a further two years. Both restaurants were situated in the city of Washington.
“What prompted your trip to Australia? I asked.
“My Grandmother died and left me a small legacy on condition that I do something adventurous with the money. After three weeks with you, I’m heading to Cairns to go white water rafting, bungee jumping and scuba diving.”
“And why have you chosen to wwoof with us?”
“I read that you practised self-sufficiency and I want to learn ‘garden to table’ from you.”
Eberhard turned to me and asked, “What are we eating for lunch today?”
I laughed. “I’ve got a cook and a chef in the kitchen and you’re asking me what we will eat? Can’t the two of you work it out?”
