BACKYARD VEGETABLE GARDEN
When we moved to the Granite Belt to establish Das Helwig Haus B&B we succeeded in creating a hospitality business which became famous throughout Australia and I personally succeeded in constructing the garden of my dreams.
I believe that many people would say that they spend the first 30 years of their adult lives establishing careers, homes and rearing a family. They then spend the next 20 years consolidating businesses or change direction to follow their dreams. As we did some give up other careers, sell the family home and move to a tourism district like the Granite Belt to establish guest accommodation, wineries and restaurants. The urge to change often starts when they pay a visit to a tourism district or read a book like Wildflowers, wilderness and wine. They dream of sitting on a terrace overlooking vineyards while sipping a glass of wine.

But, the time comes when age forces them to again change direction. Sadly, most will find that during this productive and rewarding stage of their lives, their children have taken other directions and may even be living in distant states or foreign countries. The children are far away and not interested in leaving careers to take up the parent’s lifestyle business. Recognizing that their bodies have aged and infirmities are starting to trouble them they consider the prospect of selling their dream businesses and retiring. While establishing their dream businesses they had expected that one day when they sold the business the price would provide them with the equivalent of a superannuation income.
One of the reasons that this seldom happens is that younger people have their own dreams and they don’t wish to buy an established dream unless it is a profitable business, which can afford to pay labour. When dreaming they do not see the reality of how hard they must work to establish their vision, but when viewing an existing business they confront the issues of management. Which, by the time we had established our dream became the issue confronting us.
As I approach my 70th birthday this year, this is the reality which Eberhard and I must face. We listed our property for sale and held an auction in October, but no one was interested in buying our property. So, we have made the decision to down size. Read the rest of this entry »

SUSTAINABLE GARDENING
I spent some time this week reading a book by a fellow Australian, Peter Andrews. The book is called Back from the Brink and in subtitle How Australia’s landscape can be saved. He writes of the natural geography of Australia, and to my surprise, describes how the rivers previously ran in a series of shallow ponds across high country like arteries feeding the water into capillaries that spread the water down over many terrace like flood plains. With the coming of white settlers the country was quickly changed so that all the rivers now run deeply in eroded channels through the countryside, with tributaries draining water, often salty water, into them.
I am the same age as Peter Andrews, who has worked farms in South Australia and New South Wales, while I have spent much of my life on farms in Queensland. Just as people on the land learn to read cloud formations and understand rainfall patterns, they also learn to read their land. I believe I have these skills, but in reading Peter’s book I came to better understand two things. Salinity and how water moves underground. Peter does not believe in applied irrigation or the way water is stored in many farm dams, but espouses storage of water, moving water, within the ground.

SALAD DAYS
In this cool mountain climate of the Granite Belt of southern Queensland frosts sometimes continue to torment gardeners into the second month of Spring, which they have done this year. Thus, I’ve had to wait patiently before planting the seed of many of my summer vegetable crops like sweet-corn, melons and cucumbers.
When we open our garden at Das Helwig Haus B&B on 7/8th November this year for the Australian Open Garden Scheme we will have something special to show our garden visitors. I began planning these raised garden beds in February as a way of recycling three round sheets of a rusty corrugated iron, rain water tank. Now look at the result!

FIRST SPRING FLOWERS
When I established the garden surrounding our home Das Helwig Haus B&B it was to ensure that there was something of interest in the garden at all times of the year for our visiting guests. My secondary desire was to be able to walk out into the garden at all seasons with a basket and secateurs to enable me to bring cut flowers into the house. My third goal was achieved thanks to the cool mountain climate of the Granite Belt which enabled me to grow northern Hemisphere flowers, seldom seen in Queensland gardens. It was only in later years that we began opening our garden in November, as we will do again this year for the Australian Open Garden Scheme on 7/8th November, and growing a Remembrance Field of red Flanders poppies to bloom for 11th November. This morning I was able to go into my garden and gather the red foliage of an early flowering ornamental plum tree, the yellow flowers of forsythia and sprigs of of pussy willow. I displayed these on the unlit combustion wood stove in our dining room.

AN ABUNDANCE OF ZUCCHINIS 2
I promised one of my readers a recipe for Zucchini Pickles. As I wrote in An Abundance of Zucchinis 1, zucchinis didn’t feature highly in the diet of Australians until after the migration of many Mediterranean people to Australia in the past fifty years. I planted my first packet of zucchini seed in the 1980’s and was amazed at the abundance of zucchinis this packet produced. A friend, Margaret Arnott from Canada, sent me her recipe for Pickled Zucchinis.
When we moved to live on the Granite Belt of southern Queensland to establish Das Helwig Haus B&B we found ourselves blessed with Italian born neighbours who grew fields of Mediterranean vegetables every year. On her welcoming visit to our home, Nerrina brought us a box of zucchinis. She said, “Just climb through the fence and help yourself any time you want more.” Thus, I have not bothered to grow zucchinis in recent years.

AN ABUNDANCE OF TOMATOES
Although I grow organic tomatoes in my garden they are mostly for salad use. I find that the cherry tomatoes have less insect problems than the commercial varieties. My garden at Das Helwig Haus B&B on the Granite Belt of southern Queensland is surrounded by commercial fruit orchards and vegetable farms. The down side of this is that all the insect pests manage to find breeding spots every year, hence the need for farmers to use insecticides and those pests are happy to move on to my unprotected crops. The plus side is that the farmers will kindly give me their excess produce.

Last year I was allowed to pick tomatoes from fields that had been abandoned. It is commercial practice to only pick tomatoes while they are green. When the price drops, or the farmer thinks the plants are past their prime, the crop will be abandoned as uneconomical. When time permits the farmer will clear his land for a different crop in his rotation plan. Thus, each year I witness the waste of many vegetables as they rot in the field.

The good thing is that as the crop was still green when the farmer abandoned it, these tomatoes had several weeks to ripen naturally in the sun, free of insecticides. . Read the rest of this entry »

FOR CARMEN
Carmen was one of three Italian girls who came to WWOOF for me in August. Recently she wrote to ask:
Hi Fay,
I am writing a text about my experience by you. I remember a strange story about the name of a bird, which you tell us but I don’t remember the whole story. could you help me, please? could you also tell me something about the methods you use to improve your garden. I wrote something about the use of jelly, molasses, compost, fence against birds, and the practice of burning grass. Could you explain me something more about it?

I wondered, had I told them about the Kookaburra, the laughing Jackass? The Kookaburra belongs to the Kingfisher family and as such are carnivores. They sit on a branch looking for any movement in the grass below. They will snap up a snake and beat it against a branch of a tree, or drop it from a height to stun it. Two kookaburras may even join forces, one on each end of the snake to pull it apart. They will eat the snake. In the winter time when snakes are hibernating and other prey may be scarce they will perch along my garden fence, looking for little frogs or lizards. They often frequent picnic grounds for a free handout. They will come regularly for feeding if people begin throwing them meat scraps.

We have several family groups of Kookaburras on our farm. They cluster together every evening on a tree branch and laugh. Our overseas Wwoofers often think this noisy “Hoo-hoo, ha-ha, hoo-ha” type call is the chattering of monkeys in the trees, but Australia has no monkeys. Due to this chorus of laughter these birds are sometimes called the Laughing Jackass.
The Kookaburras cluster and laugh shortly after dusk and again laugh in the morning at first light before dispersing for the day.
In the spring season there is much laughing throughout the day as the male Kookaburras compete to claim territory.

AN ABUNDANCE OF SWEET CORN
As a child the only corn I knew was maize. My father always planted a plot of this corn, much of which was fed to the pigs. If it was picked young while the kernels were still milky with juice it could be boiled and served for a dinner vegetable, but my favorite treat was to roll the young cobs across the hot metal top of our wood burning stove until some of the kernels blackened. Then I would sprinkle the cob with salt, slather it with butter and go outside to chew every last kernel off the cob while butter ran down my chin.
Back about 1983 I spent a week holidaying in Fiji at one of the expensive beach side resorts. I had slept too late to take any of the Saturday morning excursions organized for tourists, but found the Fijian entertainment manager in the lobby trying to put together a trip for his own amusement. With nothing else to do I accepted his invitation to join him and a few other stragglers, to attend a football match in Sigatoka. We all piled into a little bus, then made a side trip to collect the children of his family, before taking the road through sugar plantations over the hills to Sigatoka. The football field was a bare area of grass surrounded by a high ring of corrugated iron sheeting. Young lads perched, seated on their rubber flip-flop sandals on this sharp edge. Men had climbed trees and were sitting on all roofs that offered a view. We were led by our guide through a muddy area where forty-four gallon former fuel drums, set over fires, were boiling water with corn cobs still in their husks. The Fijian locals were buying this corn on the cob, pulling off the husks, dropping these on the ground, munching off the corn kernels and then dropping the chewed cob to join the other refuse under foot. I reminded me of my father’s muddy pig pens.
By the time I had my own garden at Das Helwig Haus B&B and began growing vegetables the seed of sweet corn was readily available. Now there are many seed varieties from which you can choose. While seed packets give instructions about the distance apart and the depth to plant seed it is important to note that corn is wind pollinated and should be planted in squares, not long lines.

AN ABUNDANCE OF ZUCCHINIS 1
Every year when I was a child my father cleared a piece of scrub land on our farm at the foot of the Bunya Mountains and burnt off the felled scrub, before planting pumpkins, watermelons and other vegetables in the ashes. Years later he asked me if I knew why these crops flourished? By then I had become the gardening guru in the family. Dad said, that if he merely added ash to a vegetable garden he couldn’t get the same healthy result. I explained that not only was he using fertile soil for the first time, but the heat of the fire had killed all the nasty pathogens in the soil which might have inhibited the growth of his vegetables. This is a method of growing vegetable gardens in tropical countries like Papua New Guinea.
When I was a child we never ate baby vegetables like button squash and zucchini. The Acorn Squash and Marrow, as we called zucchini, were rather despised and tasteless vegetables, best hollowed out and stuffed with a savoury meat mixture. It was only after Eberhard and I moved to live on the Granite Belt of southern Queensland in 1992 that I came to have an appreciation of Mediterranean vegetables like zucchini, eggplant and capsicums. The Granite Belt has a cool mountain climate and many of the farmers here are descendants of earlier Italian immigrants. Each year this district supplies a huge volume of vegetables and fruit to the Brisbane and Sydney markets.
Disaster struck the Granite Belt community on Christmas Day with a huge hail storm that destroyed or damaged many of the vegetable crops as the farmers were about to commence the seasonal picking.

The farmers had two choices. They could slash their damaged plants to the ground, plough the soil and replant, or they could pay workers to strip from the plants and throw away all the damaged vegetables, in the expectation that the bushes and vines would recover and begin bearing produce again. SUNSHINE YEARS
Sunshine returned to my life in 1974 when I realized I was pregnant with our fifth child. I had been feeling the despair of poverty – making do on a truck driver’s wage, the loss of a car and the need to once more begin paying off a home. All my homemaking skills came in useful as I again established a vegetable garden. I began sewing school uniforms to earn a little cash. To this day Carol despises any food called soup or stew and refuses to eat ripe bananas, because I discovered that one of the fruit shops put aside boxes of spoiled fruit and vegetables, which could be purchased for only a dollar. We ate lots of apple pies, banana cakes, fruit salad and vegetable soups. My children were never hungry but they sometimes wished for the ‘take away’ foods that other families bought. Stewart’s work meant that once more he was frequently absent and I had to cope alone in emergencies, like when Paul had acute appendicitis.
The return to Dalby and Stewart’s employment in the family transport firm had a downside, in that there is always dissension and rivalry when family members live and work in close proximity. The bankruptcy of our business brought shame on the McIver family name. Stewart worked long hours partly to bring home extra money, but also to lose himself in his work. Less forthright women within the family began to see me as different to them and labeled me as “strong and capable“. This allowed all family members to look the other way when I was in need of assistance. I was slipping into depression when I realized I was pregnant. Stewart welcomed the thought of a new baby, saying he had neglected his other children and promised to become a family man after the birth of our son. Adrian was a much loved baby and I called him the “Sunshine of my life,” because he brought joy and hope back into our home.
Then Cyclone Tracey struck Darwin in the Northern Territory and once more our lives were changed. Read the rest of this entry »
